Kitchen table: Citrus-berry energy balls

These little balls of goodness are great for wrapping up in parchment or tossing into tupperware and taking out with you for a healthy and energising boost. Energy balls are also a great way to use up leftover ingredients, so feel free to modify the type of fruit and nuts used according to what you already have stocked up!

Ingredients:

1 cup walnuts
1 cup dates
1/2 cup desiccated coconut
1/4 cup fresh berries
1/8 cup orange zest
Optional: freeze dried passionfruit to garnish

Method:

  1. blend all ingredients excluding passionfruit garnish until crumbly in texture but still able to hold together
  2. roll into balls and place in the fridge to set
  3. dust with freeze dried passionfruit powder and serve!
